Remember my question about freezing pesto?

  1. Well, I made the pesto. I had 400 grams of basil (harvested from my
    miniature garden) and wound up with 1.3 kgs of pesto. That is way too
    much. SO i froze it in small portions. Then I realized how rarely I eat
    pesto. This will last a looooong time.... But I did try it before
    freezing and it tastes very good.

    BTW, don't use a blender for this amount (and possible any amount). It
    don't work., i wound up with a lot of extra wort to get everything
    chopped. Now, for my next birthday, I want a food processor.

    Good for you! That is a lot of pesto. It makes charming little hostess
    or thank-you gifts if you put it in a cute little jar (if you're that
    sort of person). It's also good mixed w/ a little mayo for sandwiches,
    or stirred into veggie soup. Enjoy!

    Hostess gifts are uncommon here, but I do like the idea of them. I do
    use jam as a gift sometimes.

    I put the pesto into small plastic bags and have frozen 2 containers
    full of those. I am thinking sandwiches, pasta sauce, tomato soup but I
    think I'll need all the recipes I can get 🙂 So thank you!

    I never thought of this before, but how about mixing some of *our* frozen
    pesto with sour cream or whatever and using it for dip? Or how about pesto
    spread on avocados? I like the pesto spread on sturdy pita, stuff with feta &
    fresh tomatoes. I'd like to vary the recipe with different oils next year. I
    planted lots of basil in two 4' window boxes, 3 times this year. Froze pesto
    in 4 oz. mason jar-ettes. Was more than our family could use for sure. Been
    using lots of pesto and giving lots away.

    liek to make with pesto or pesto mayonnaise.
