Here's what I did.
I marinated the salmon head in soy sauce, olive oil, fresh ginger and
fresh dill.

I put it on the grill on med low heat for probably a half an hour,
turning once.

Nice and moist.

I need to experiment with this a little more. Most of the fish was
perfect, but a small part of the interior was still a little under
cooked.
I went straight for the cheek meat. It is almost white and sooo sweet
and juicy.
I'm not sure, but I think I accidentally ate the tongue eeewwww!!!
Getting past some of the interior, like the gills, had a little ick
factor. I stopped digging for meat before I ran into anything that
resembled "grey matter"
