JanetI never had an issue freezing it since it's always used for cooking...

Thanks, my store only carries the whole milk ricotta in the large
containers -- much more than I need at one time. It'll be great to have
ricotta on hand rather than having to run out for a special purpose.

I freeze it and I've frozen it in pasta dishes without any mishaps. I

JanetI only use Ricotta in pasta dishes. I don't know why, it is a fine cheese.
