Cheesecake is by far the easiest to modify for a reduced carb dessert. The sugar doesn't add any structure, so it's just for sweetness. Get rid of the crust or replace with a nut and butter crust and voila, lower carb.

There's some cheesecake recipes that were posted recently if you'd like to give it a whirl. If you like your cheesecakes smooth and creamy, make them without any added flour. Adding up to 1/4 cup flour will give you a drier, crumbly cheesecake, more like a NY style.
Cheesecakes always come out better if they're baked in a water bath. Less cracking.
