You boil, steam or poach.

If not the term, at least the spelling. Saute.
Come up with a new term that defines "to cook hot and fast, moving the
food around the skillet, using water or other liquid as a substitute for
the fat used in a traditional saute." It's not boil, steam, poach, or
simmer.
What would you suggest?
It IS possible to fry hot and fast in a dry (non-stick coated) pan.
I'd sure as heck never use water, altho' I do use water as the base for
coating stuff for deep fry in place of an egg wash. ;-)

Back when I was in college and on a low fat kick, I'd fry eggs in a dry,
non-stick pan. No oil, no water.
I really don't think using water for a hot and fast cook would work
well, unless you were using boiling water for poaching??????
I have steamed, but it sure as heck does not yield the same result as
Saute'.
