hippy-<< I've just upgraded my pedals from PD-M540
SPD's and Nike shoes to the PD-R600 SPD-SL
pedals and SH-R151 carbon-sole shoes.
I'm wondering if I should adjust my saddle height
and if so by how much? I can't find stack height
figures for either. What should I be looking for? >>

The easy answer it to just install the cleats/pedals and go ride and see. Just
ensure it's not a long, long, long first ride. The more involved answer is have
somebody do a cleat/bike fit to see measuring leg angle, cleat position, kops,
etc.
New shoes, new type pedals/cleats involve a lot more than just stack height. it
also involves where the cleat is, fore-aft and left-right.
