A discussion of Southern foods in the rfc chat room prompts
me to post this again. Yellow (Crookneck) squash is
available in abundance now (at least around west TN). This
is absolutely delicious and so easy to prepare.
1-1/2 to 2 c. sliced yellow squash, steamed until *just*
tender 1 c. grated Parmesan cheese 1 c. dried breadcrumbs 1
c. milk 1 Tbs. minced onion (add more to your taste) 1 Tbs.
melted butter 2 eggs, slightly beaten
1/2 tsp. salt
2/4 tsp. pepper
Combine all ingredients in a 1-1/2 quart casserole. Bake at
350F for 1 hour. The casserole will be lightly browned on
top and puffy. Delicious!
