Stack Height

It's hard to say, since it doesn't seem to be measured in any of the catalogs. I use Speedplay's which have noticeably less than my previous pedals (older Look's). The Keo, Time RXS and Dura Ace all seem to get you down pretty low.

Times are about 8mm. Eggbeaters (all models) are around 11mm. Anyone have others?

Speedplay's (both X and Zero series) have 8.5 mm if you use the standard 4 hole cleat. 11.5 mm if you need the the three hole adapter.

I'm just asking a question about this, but wouldn't you have to include the thickness of your shoe sole for any of these numbers to be meaningful? I ask that because, in the end, it's the distance from the ball of your foot to the axle that determines your fit to the bicycle. Right?

You are dead right, I should be asking what is the best shoe/pedal combination for minimum stack height… anyone?

In that case, I would say that a high end road shoe with a carbon sole is going to be the thinnest sole. I have the Shimano R151 which is their 2nd_from_top road shoe and it's got the thinnest of three pair of Shimano shoes I own (Shimanos just fit me great). At the other end I have some walking/SPD type shoes which have a noticeably thicker sole. The SPD-SL type pedal which I use with the R151's are very low profile and the sole of that shoe actually curves down into the cleat.
It gets the ball of your foot very close to the pedal axle. Shoes are something that I will always buy at the LBS. Mail order is a [censored] shoot when it comes to fit, so I don't even bother with that. So, if you do go to the LBS to get them, it's a good time to ask your question. I'd think they'll be happy to show you the different cleat, shoe, and pedal types and get you a stack height you like. There are really those three different things that figure in. Good luck ;-)

I would buy a shoe based on the fit and performance. Chances are a thinner (non-carbon) sole would be too flexible. It's funny, because I'm an avid skier as well, and the FIS had to put limits on the stack height of binding/plate systems. The World Cup guys were skiing on stilts..
