Stuffed Manicotti- 1st time! Tips appreciated.

  1. Hello everyone,
    I want to make stuffed manicotti tonight. I have ricotta cheese,
    cottage cheese, eggs, marinara, alfredo and I also want to use
    broccoli/ spinach/ mushrooms. Anyone have any tips on how to
    incorporate the latter three items? Anyone have any good stuffed
    manicotti recipes? I was thinking of mixing the ricotta with the
    cottage cheese, and add and egg w/salt and pepper. Has anyone ever
    tried that? Help!

    I have made this plenty of times. I've always used ricotta, spinach,
    mushrooms, onion, olives. Your broccoli, spinach and mushrooms should work
    well, just make sure they are really, really small and dry. Add those three
    ingredients into the ricotta with some basil, oregano, garlic and nutmeg.
    Yes, nutmeg. If you have an onion, add that, also if you have parmesan
    and/or mozzarella, throw that in the mix as well.

    I would boil the shells (they are difficult to stuff that way, but you can't
    add extra water with alfredo sauce) and then carefully stuff them for the
    baking process.

    I miss this stuff! Damn, this low carbing anyway! :~P

    What I wanted was the shells, but I only found the mannicotti at the
    market, so I guess I'll be stuffing from either side and have nothing
    in the middle. J/k, I will try to stuff them thoroughly. About the
    Alfredo sauce: I don't know if I'll be using it, I think I might just
    go with the marinara, or maybe mix the two.

    Keep watching for new pasta shapes from Dreamfields. I wrote to them
    awhile back, to see if they have plans for lasagna noodles, and they said

    Might be too late for this but think about putting the filling in a plastic
    bag and then cutting the tip off one corner - use it to "pipe" the filling
    into the tube pasta.

    Thanks for the "tips" everyone. Luckily I found some jumbo shells at
    Vons. ;-)
    I stuffed them with a ricotta cheese/ cottage cheese/ chopped spinach
    and broccoli mix. I lined the bottom of the dish with Alfredo sauce and
    poured marinara over the shells and they tasted pretty good!
