After the recent thread about vegetable beef soup, I just had to make some.
It was always a summer dinner when I was growing up because of all the
garden veggies needing to be used and I had to use mine also. Although the
temperature forecast was for 102 F., we had so much smoke in the air here
because of all the fires in our state and surrounding states that we were
completely overcast and the temperature topped at 89 F., perfect. I got a
nice beef knuckle bone for $1.47 and a nice chuck steak for $1.87 -- they
made a wonderful broth. Veggies were celery, onion, carrot, cabbage, string
beans (green, yellow and Roma), potatoes and parsley. Wonderful. A taste
of home.
