Surf's recipe for success

  1. Two large Rainbow Trout fillets
    1/2 tbl sp minced garlic
    1 or 2 small red hot chili peppers (discretion advised)
    1 stalk lemon grass minced (leaving out the most coarse bits)
    3 tbl sp olive oil

    Trout rub:
    2 tbl sp flour
    1 tbl sp brown sugar
    1 tbl sp fresh coriander, minced
    1/2 tbl sp paprika
    1/2 tbl sp fresh ginger, minced
    1/2 tbl sp ground turmeric
    1/2 tbl sp ground cumin
    1/2 tbl sp sea salt
    1/2 tbl sp ground black pepper

    Wash and pat dry fillets with paper towel.

    Combine Trout rub ingredients. Rub lovingly over fish.

    Bring the olive to medium heat in a large skillet. Lightly wet your hand under running water. Flick hand at (heated) olive oil. If the oil spatters a little (or a lot, be careful) its ready

    Add the garlic, chilies, and lemon grass. Stir for one minute.

    Fry dressed fillets (turning occasionally) until flesh flakes away (at least) slightly. I prefer the skin (alright, scales, but they are very fine, edible and sumptuously good for you) a bit crispy.

    Two cups jasmine rice
    3 tbl sp olive oil
    1 tbl sp sesame oil
    2 tbl sp soy sauce
    2 cloves garlic minced
    1/2 thumb fresh ginger, minced
    1/2 cup or more [censored] mushrooms
    1/2 cup frozen corn nibblets
    1/2 cup frozen carrots, diced
    1/4 cup diced red pepper
    1/2 cup precooked lamb, chicken or beef. Precooked, chopped, marinated etc. "as you like it"
    2 eggs

    Soak the jasmine rice for fifteen to thirty minutes, Rinse twice and drain. Add > 2 cups water and bring to a boil. Reduce heat and simmer for 8 to 10 minutes until al-dante (checking occasionally). Remove from heat and allow to cool.

    Bring the olive to medium heat in a large skillet ...

    Add the sesame oil. soy sauce, garlic and ginger.
    Stir for about a minute.
    Add the mushrooms, corn, carrots, red pepper and meat. Cook for three to five minutes.
    Add rice gradually, mixing thoroughly.
    Cook over medium heat. Continue stirring.
    When a *little* of the rice begins to brown (crisp), make a 'bowl' (open space) in the middle of the pan. Add the eggs and fluff till scrambled. Toss and serve.

    The rice will take longer to cook than the fish. Prepare measured ingredients ahead of time. Serves four. Enjoy.

    Since we are what we eat, sometimes even temporarily (ever had a burrito?), food can have astounding and delicious impact on how we feel and run.

    I've found the above to be Premium-Surf-Fuel. Hope it works for you.

    OK, I'll admit that - even to a committed vegetarian - these feasts sound quite tasty, but why oh why kill the flavour of things with damn chilli peppers? I'll be buggered if I'm going to sit and eat 'a la Surf' with a bowl of water by my side to soothe my blistered palate.

    Dontcha think you should let the natural flavours of the food rule? Trout - simply fried in butter - can be jolly tasty. No need to smother the poor beast in a mish-mash of weird flavours. OTOH, your rice-based dish sounded an absolute delight (skipping briskly over the meaty bits, of course). I may demand you make it on our first night together in your backwoods retreat :-)

    Well I you like hot stuff, and the damn things are fresh (not as hot as old ones), and seeded, the dish really is not that hot, nor the trout over-powered. I concede however many or most might prefer it without ... wimps.

    I'm slowly coming around to that uncomplicated view my flora munching friend, however I've been running through "enhance and complement the natural flavors of the theme ingredient with a subtle yet palpable blend of fresh herbs (finely chopped, never bruised) and fragrant spices" country to get there. I think it is rather a long run, but I just got new shoes. Careful not to step in the foie gras.
