Make your own glaze. You can use Splenda instead of some or all of the
sugar/honey. And you'll know exactly how much there is, so you can
figure out your carbs.

As for cauliflower, google for "fauxtatoes". There are lots of recipes
out there.
You can make pumpkin custard (aka crustless pumpkin pie). You buy a can
of pumpkin puree (not the pumpkin pie filling). There's a recipe on the
can. Ignore the crust, and substitute cream for the condensed milk and
Splenda for the sugar. I brought some to a Halloween potluck at work,
and had non lc'ers ask me for the recipe.

Get a frozen or fresh turkey breast. Smaller, easier to deal with,
and good if you're cooking for 1 or 2.
For the faux mashed potatoes:
2 heads cauliflower
1 Pkg cream cheese
2 Knorr Veg Bullion cubes
Black Pepper
Cut up cauliflower into about 2 - 3" chunks and boil till soft. I
discard the center base piece near the bottom, but use all the rest.
Next step is key. Get out as much of the water as possible. I do
this by first using a masher to press them while they are in a
colander in the sink. Then use a small plate to press on them in the
colander, repeat till most of the water is out.
Place in food processor and add cream cheese, which has been warmed a
bit in microwave to soften. It helps if cauliflower is still
warm. Mix veg bullion cubes with couple Tbsp of hot water in cup and
dissolve in microwave. Add to food processor with some black
pepper. Process till desired consistency. Adjust salt/pepper as
needed. If you use veg bullion cubes, shouldn't need salt as the
bullion has enough. Can also add roasted garlic, fresh garlic,
chives, whatever you like.
The qtys are approximate. I just wing it each time I make them, but
none of this is critical, you can adjust as you like. You can also
use chicken bullion or base instead of veg, but I've found the Knorr
veg product to be be best. Same recipe works with rutabagas too.
You can also make stuffing, using most recipes and LC bread. It
won;t be super low carb, but for the holidays or those nearing
maintenance, etc can be a tasty side dish in moderation.
Cranberry sauce is easy and delicious. Just buy a pkg of fresh
cranberries and follow the recipe on the bag, substituting Splenda.
It's just the berries placed with water, Splenda, orange zest and
boiled for a few mins
