Thinking about lunch........

  1. God, I so want to make a pasta carbonara, but I don't have any eggs or
    parmesan. What I do have, however, is cream (not supposed to consume),
    bacon, peas, flour, butter, pasta............... I'm thinking I can make
    something out of this, but I wish I had some sort of parmesan/romano! We
    usually do, but we're out right now. I've got fresh mushrooms, celery,
    onion, garlic and I have to be at work in a matter of hours. Any ideas?
    I'm getting really hungry!

  3. Well... I'd boil and drain the pasta, fry and crumble the bacon, saute the
    mushrooms, celery, onion and garlic in a little of the butter, then add all
    of this and the bacon to the hot pasta and have lunch!

    I agree that cheese would be missed. If you have them... some chopped fresh
    herbs would be a nice addition, as would a splash of sherry.

    The only thing I wouldn't use on your list is the flour.

    I've seen you cook by "instinct" so you have the knack!

    I'm thawing out some pork chops that I intend to electro-grill with some
    light seasonings, and I'm steaming up some chunks of carrots with
    brocolli, portabello mushroom and some cocktail shrimps tossed in just
    for grins........

    Yummy, yours sounds good to me! I got the bacon done, I'm about to sautee
    mushrooms, onions and garlic in the bacon grease. I have to have pasta!

    I would make an onion, garlic cream sauce to put on the pasta. I would also
    add some bacon, peas and some of the mushrooms. Do you have another white
    cheese you can substitute? Some mozzarella maybe?

    I haven't even thought about lunch or dinner yet. I'm thinking pork chops
    for dinner. I'll grill them with some store bought pork rub. I don't know
    yet about veggies or sides. I haven't been to the store since I got back
    and the pickins are slim. I may go to the Farmer's Market this afternoon
    and snoop around.

    Sounds really good to me. I dream up stuff all the time. It's called
    cooking by the seat of your britches 😉 What I hate running out of more
    than anything is stock or home made broth. Both the chicken and beef are
    staples around here. I can have a dab of this and a dab of that in the
    fridge and come up with an acceptable soup just about anytime.

    Yummy, yours sounds good to me! I got the bacon done, I'm about to sautee
    mushrooms, onions and garlic in the bacon grease. I have to have pasta!

    For me it turned out to be a soup day. So I raided my freezer and found
    some sausages that had been there awhile; frozen bacon and some pastrami
    that I'd thrown in about a month ago.

    1 1/cups green split peas
    1 tsp rosemary
    1 can each of diluted chicken & beef stock ( I like the mixture)
    1 onion
    2 cloves of garlic
    2 carrots

    Fried up the bacon & sausage, added the onion, garlic, rosemary and carrots.
    Browned for about 6 mins. then added the stock and peas. This should take
    about an hour. I'm still debating whether I need the pastrami at the end or
    not. But it already is tasty!

    Without cheese you're just fine.

    Do you have any frozen seafood in the freezer?

    Seafood mandates no cheese for superior flavor.

    sounds good, except that I'd thicken it with a little cornflour or
    flour... heated cream goes sooo runny!

    I wanted meat for lunch so I fried up a skinless chicken breast with
    seasoning, chopped it and put it in a bowl with butter lettuce,
    quartered cocktail tomatoes, helman's homestyle mayonnaise and some
    frozen sweetcorn that I thawed in the chicken pan. Yummy, and at least
    relatively good for me!
