Two Soups Today

  1. Got up early this morning and made some mixed bean soup with ham
    shank, and some lentil soup with ham shank and cinnamon.

    The mixed bean soup was pure improvisation. Ingredients are listed
    along with the picture (see link in sig). The lentil soup was from an
    actual recipe.

    Lentil and Ham Soup

    Serving Size : 0 Preparation Time :0:00
    Categories : beans-legumes soups-chowders

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 tablespoon bacon grease -- or butter
    1 medium onion -- finely chopped
    1 smoked ham hock
    1 pound lentils -- (2 1/2 cups)
    1 large carrot -- finely diced
    1/8 teaspoon cinnamon
    1 bay leaf
    7 cups water

    Saute onion in bacon grease or butter until translucent. Combine all
    ingredients and simmer soup, covered partially, stirring occasionally,
    1 1/2 hours. Discard bay leaf and remove meat from hocks. Chop meat
    and stir into soup.

    The mixed bean soup cried out for at least a hint of tomato. I think
    it really improved the soup.

    I kept the lentil stuff "pure" because I was sure that Crash would
    like it, and I wanted him to try it. He's always been adamant that he
    hates lentils. I gave him a small taste yesterday, and he liked it!
    Enough that he agreed to have a whole serving of it later. Then I went
    to bed for a million years and never got a chance to remind him to eat
    (he's one of *those*).

    No, I didn't! I was a newlywed in '76, still trying to remember to
    take the paper bags out of the turkey cavities.

    You got that right! I have to fry some bacon and get a new supply
    started. That's probably what's missing in the soup ... I used butter
    instead. 😄

    You never know what you might find on eBay.

    I'm sure there are some copies on abebooks.com. It isn't the
    easiest site to search but if you know the published (like in
    this case) you're golden. I actually bought a set for $14
    with shipping just before I posted this. I've seen them at
    used bookstores before but didn't know whether it was any
    good. Thanks for the recommendation.

    Fine Cooking is my favorite, and the only cooking magazine to which I
    subscribe. It has fancy and simple recipes, focuses on technique, the
    recipes are more like exercises to learn a technique that you can then
    use in any other recipe or dish.
