I've been doing the elliptical machine for a few years and my body and mind
are both just sick of it.

I can't do bicycle because of a knee injury,

    Are you sure? Really?

also can't run (for the same reason).

Can you walk? Are we talking crutches or wheelchair?

    What?

Rollerblading. Swimming. Rowing. Water Aerobics. Tennis. Badminton.
Volleyball. Basketball. Hiking. Contra dancing. Ballroom dancing.

What do you LIKE to do?

    How long? How intense?

Either long OR intense. I like to do short intense interval workouts,
and will do them on a variety of equipment. What does your gym have?
Try out that Concept II rowing machine. Chances are it's sitting empty
    even in the January rush.

Personally, I think cycling and swimming are great exercises that are
kind to joints. I'm doubtful that your knee injury prevents cycling.

My weight training is going just fine, but suddently the cardio part just
    fell appart..

Have fun with this. Children call this playing.

I get tired after an hour, so a few years is quite good.

Well try walking more, swimming, cross country skiing (if ya got snow),
    or even cardio boxing:
    http://sportsmedicine.about.com/od/sampleworkouts/a/cardiobox.htm
or just add changes to your speed/levels etc on the elliptical to
    challenge yourself.

If you do your weight training ala circuit training style you can get
somewhat of a cardio workout at the same time ... but then cardio is
    really overrated, see #2:

I can walk just fine, I can't do impact movement (like running) and
    never
could cycle (tried many times always ended up hurting pretty bad).
    Long
story short I broke my knee pretty bad years ago and it never healed
    right.
Certain movements just don't work for me (like cycling).

You know.. you're right, maybe I'm just taking this too seriously..
    playing
is good.. might just take my dog out for a spin ! ;o)

There are lots of innovations in bike pedals over the last decade -
so-called "clipless" systems that work sort of like a ski binding -
click in, turn your heel to get out. Speedplay is a company that makes
pedals with near infinite "float", which means your knees can find a
comfortable groove at every point in the pedal rotation. I've had knee
issues - too many years of bad running form - and couldn't really bike
for distance until I put Speeplay's on my bike. Talk to a bike shop,
ask on news:rec.bicycles.tech. Some folks don't like Speedplay's
because they say it feels like they're walking on ice, but once you get
used to that "slippery" sensation of your foot being able to turn
however it needs, many people find it's the end of their knee problems
    on a bike forever.

Gotta look up the prices of the local pools.. I used to be a
    lifeguard...
    swimming was my thing..

Swimming is great cardio - most YMCA's have a pool and a cheap
membership. I think a swim membership at my local Y is $20 per month.

ok... fun stuff.. rollerblading (with the dog it might be an adventure
    hehe)
ice skating... it's been years.. if nothing else I'd entertain the
    crowd !
    hehe

I have lots of free time... I'm just bored with what I'm doing..

There's always strength/endurance work like kettlebell swings. One set
of kb swings at the end of each workout has kept my resting pulse in the
40's when I did no other cardio. You can also change the focus of your
program to something like Bryce Lane's 50/20 - try to get 50 reps of a
reasonably heavy weight on a compound movement done in 20:00 however you
can manage it. It will make you stronger and take care of your cardio
    at the same time.
