I currently have a DA 7800 double setup (came with the bike) and with a FT of only about 250 watts currently I’m going to need lower gears for some riding in the Pyrenees this summer while I train. I was just checking some comparative weights of the levers, crank and derailleur and I make it only about 100g or so weight premium over the double. Does this sound about right to you guys and if so, why do I not see more of them about for such a small weight premium?
I’ve tried a stronglight compact crank (need 180mm and this is the only vendor at this size for compact cranks) and aside from being flexy the changing is nothing like as good as all DA in my opinion - this means DA triple 180mm is my only other option.
The target market for DA is for riders who don't need to go for a triple i.e. people who race competitively.
They do, make them - just ask your local dealer to order them in.
Have you considered using an Ultegra or 105 triple, or even the FC R700 compact? All will get you some seriously low gears, and should be plenty stiff for your riding.

I never said that we aren't entitled to use a DA triple - perhaps the wording should have been they are targeted at riders who "usually don't need" them!
The OP's question was why are they so uncommon, and I think I answered that one fair and square - not many people buy them, so the big S don't make as many sets.
He won a stage BECAUSE he had a triple. It was raining on the Angliru (ferocious climb) and only he could stay seated and maintain traction - everyone else was standing and sliding.
One downside to DA triples is that you have to like the chainring size they select for you. I wish I could change my 30 tooth inner and 40 tooth middle to a 34 and 44 respectively, but apparently there isn't enough demand for such things. Sigh.
