    Ours is meat pie and salad, and then we go out to a party at my brother's
    house.
    We make either a steak and mushroom pie or tortiere.

    If Melba's objections to seafood are religious or medical I
    apologize. However some recipes are remarkably good and quick. I
    was conscripted without notice into preparing scallops for a
    recent Thanksgiving dinner. I made a few as a test and
    practically had to give them all to my enthusiastic
    three-year-old great-nephew! Here's my recipe.

    Caramelized Scallops
    From "The Black Dog Summer on the Vineyard Cookbook" (Little,
    Brown and Co.).

    (Recipe for 4; it scales quite well and worked with frozen
    scallops from Trader Joe's. They were defrosted in the
    refrigerator and then rinsed quickly with vinegar and water to
    remove any fishy odors. The actual preparation took about 20
    minutes. )

    2 Pounds "sea" scallops (I guess big ones are meant)
    2 teaspoons minced fresh parsley
    Salt and freshly ground black pepper to taste
    About 1/4 cup (squirt or two) extra-virgin (of course) olive
    oil.

    Sprinkle the scallops generously with the parsley and salt and
    pepper to taste. In a large
    nonstick skillet over high heat, add enough oil to completely
    cover the bottom and heat just until the oil begins to smoke.
    Reduce the heat to medium-high and carefully add the scallops,
    seasoned-side down. (A non-stick pan actually only requires a
    mist of
    olive oil.) Do not turn or touch the scallops until well
    browned; 2 to 3 minutes. (You can cook the scallops a little
    more slowly and on only one side until they stop being
    translucent if you like.)

    According to the original:"This allows the sugars in the
    scallops to caramelize". That's
    not exactly what happens. The juices from the scallops do form a
    brown crust which does not adhere very strongly hence the
    instructions not to touch. It's hard to see what's happening on
    the down side so you may have to sacrifice one scallop's
    appearance to allow inspection.) Then turn the scallops and sear
    the other side until "golden brown" and cooked through, 1 to 3
    minutes. (Similar comments on crust.) Serve "immediately"
    (Quickly! Does the cook not eat?)

    I have recipe for chili cream that goes well with the scallops
    but it's rather hot and fresh lemon or lime is also good.

    My favorite traditional Eve meal is Norwegian Soup (it is beef,
    cucumber slices, tomatoes, sour cream). My mom always made oyster
    stew, but oysters make me gag.

    Like you, Christmas is just another day around here. I do like to do cheese
    fondue sometimes, but that's usually on New Year's Eve.

    We do not have a set dinner on Christmas Eve, but often serve Mexican
    food, tamales, and lots of things to have on them... cheese, onion...
    chili... etc. That is what we are having this year.

    The day before Christmas Eve, I am making lasagna. We are having
    Christmas at my son and wonderful DIL, she is pregnant with my first
    grandbaby( girl) and I am trying to make things easy on her, so am
    bringing a lot of food. Tamales, Lasagna, and a ham. On Christmas day
    she will fix a turkey and I will make the oyster stuffing for the
    bird.

    Will be a very nice several days.!!

    Mother does the rib roast thing. Steven's sister does a great brisket.
    Other than dinner and the usual sides it will be decent cheeses, crackers
    etc. Nothing real special but all of it good. My friends Kris and Carla
    will be in attendance at some point. We'll do dinner out and then Kris
    will finish her chemo. It wears her out really bad so food is not going
    to be a big thing for her except for Straub's chicken noodle soup. She
    loves it.
