    We often have a dinner with peameal bacon as the meat. It's a lot leaner
    and supposedly lower in sodium than regular bacon.

    Amen. Real peameal bacon is a treat, and the so-called Canadian bacon you
    usually get in the states is a travesty. Whenever we go to Canada we fill a
    suitcase with the stuff. If it is vacuum packed the customs people will let
    it thru.

    (not for their web site). He used to get free food. That's not a bad deal!

    They had employees taste-test new products. They had a test kitchen; I got
    a tour of it. They had these little booths the employees would sit in so
    they couldn't see each other or chit-chat about what they were tasting.
    They would be given a sample of one thing, then a cup of water and a cracker
    to cleanse the palate, then a taste of the next thing. Then they wrote down
    their opinions of sample #1 vs. sample #2.

    Sara Lee corporation also owns non-food related companies including Hanes
    Hosiery and Bali Bras.

    Jimmy Dean and his wife wrote a state song for Virginia and went around
    promoting it. "Carry me back to old Virginny" is now the state song
    "emeritus." I was running a country club at the time and he stopped by
    on several occasions to eat and hide from the rest of the world. Damn,
    he's tall. Gave me a hard time for not using his products. I asked him
    if he really wanted to talk about it. He said no. He didn't offer to
    twirl me around.

    I worked on designing a few meat products for Sara Lee out in Grand
    Rapids. They spent a lot of time and money on the ideas we developed and
    finally realized it wasn't a market they could do much with. Cancelled.
    I think it made good business sense.

    Yep, he's very tall. Something like 6 ft. 5 inches tall. I felt like I was
    on a tilt-a-whirl at the county fair when he picked me up and spun me
    around. LOL

    That's the problem though (re: shipping) - meats like those don't ship well.
    The main point is that it's never seen a freezer or the inside of a sweaty
    plastic wrap, and has been prepared in comparatively small batches.

    The stuff we get locally when we treat ourselves is free range reared very
    near by, the very best is rare breed, or 'wild' boar that's been allowed to
    roam in woodland. It's culled at the perfect time, usually cured on site in
    traditional manner, and sold through outlets within a ~20 mile radius. The
    whole thing would fall apart if demand went up, as it would, should they
    offer to ship it much further afield.

    Believe me - if I could post you some, I'd do it!

    GAG! Please don't lump us all under that umbrella. What restaurant
    chain did you eat at? I've never heard of any processed luncheon meat
    that was labeled Canadian Bacon. The stuff I buy and have eaten in
    restaurants looks like a big tenderloin... or maybe it's loin...
    anyway there's no way it's processed meat.

    Until a few months ago I was under the impression that what Americans called
    Canadian bacon was our peameal bacon, but then I saw "Canadian Bacon" in the
    local grocery store for the first time and tried some. It is not like peameal
    bacon. It was smoked, not brined, and definitely not processed meat.
