Preventing oxidized LDL by oleic acid

  1. Here is an old but interesting study about preventing oxidation of LDL by
    oleic acid rich diet. It shows that it is not necessary to turn to saturated
    fats to prevent oxidation. Increasing olive oil, which is naturally high in
    oleic acid, in the diet would be a safer method to do it. (In the study
    below the oleic acid rich oil was not olive oil but an oleic acid rich
    variant of sunflower oil.)

    1. You assume that "saturated fat" is dangerous. What is the
    definition of "saturated fat" and where is the evidence that it is
    dangerous? As I have pointed out here many times and as some
    researchers are now realizing, it is the "red meat" and "processed
    meat" that is most dangerous, and the saturated fatty acids in these
    products are not the problem.

    It's the processed meats, but most definitely *not* the red meat
    otherwise. Caveat that grass fed beef is healthier than feedlot beef.

  5. Are you saying that no matter how a person cooks the meat it will not
    get oxidized? That is just scientifically not a valid argument.

    What if the meat is not fresh? Do you slaughter your own cows?

    Eating it once in a while is not likely to do major damage, even if
    it's not very good, but I'm talking about what most Americans do in
    terms of diet. Your best bet would be to boil it, then mix it with a
    sauce that is high in antioxidants after cooking the sauce on low
    heat.

    As to Narkia:

    I agree that if you know that the olive oil is fresh and rich in
    antioxidants, and if you consume it raw, then one might call that a
    "health food," but there's no way to know what you are getting, though
    the olives themselves are okay (purplish ones), unless they have an
    "off" taste.

    Yes, Matti, I am well aware that phenolic acids in olive oil prevent
    oxidation but oleic acid itself is quite resistant to oxidation. Please
    notice that the oil used in the first reference I posted was not olive oil
    but a high oleic breed of sunflower oil.
