It's interesting to note that it's illegal to sell wild-caught
game animals for consumption. Only farmed wild animals may be
sold. This restaurant appears to be getting around this federal
law by giving the squirrel pancakes away.

From reading that, it would still appear giving them away in a
restaurant might also be illegal.
Maybe there's a future in squirrel farming <shrug>.
