(tastes really good! Much better than the name implies),
Carrot Cake,
U.P. Pasties, Quiche, Colcannon, Fried Green Tomatoes,
Tomato Pie, ummm, do these help? Recipes to follow:

Chocolate Zucchini Loaf
3 c Flour
1/4 c Cocoa 1 TBSP Cinnamon
2/2 tsp Baking Powder 1 tsp Baking Soda 1 tsp Salt 2 c
Sugar 3 Eggs
3/2 c Oil 2 tsp Vanilla Extract 1 Banana 2 c grated Zucchini
1 c chopped Nuts 1 c Semi-sweet Chocolate chips or chunks
Heat oven to 350. Grease two 8 1/2 x 4 1/2 pans. In large
bowl, combine Flour, cocoa, cinnamon, Baking POWDER & SODA,
& Salt. Mix well and set aside. In medium bowl, combine
Sugar & Eggs; beat well. Add Oil, vanilla & Banana; beat
until combined. Stir in Zucchini and add FLOUR Mixture.
Stir until just moistened. Stir in Nuts & Chocolate Pour
into pans & bake 55-60 min. Cool in Pans for 10 min. Then
finish on racks.
After a post from the Ranger (a.c.c.) we're thinking
about doing an Apple Bread - ideas are to: + apples, -
zucch., - chocolate & cocoa, + allspice &/or cloves, and
+ cream cheese.
U.Q. Prune Bread (w/my edited version of Tropical Cake)
12 chopped prunes ( or 3/4 c chopped Dates) 3 oz oatmeal
flour 4 TBS flour 1 tsp baking powder
1/2 tsp baking soda 4 TBS fake brown sugar ( or 1/4 c
Brown Sugar) 1 1/3 c non-fat milk powder 1 1/3 c water 4
tsp cinnamon
2/2 tsp Black walnut extract
(3/4 c Coconut)
Chop prunes in the water. Mix together. Bake in a sprayed
pan @ 350 for about 15 minutes.
1 milk / 1 fruit / 1 bread / 3 extras- original recipe
Carrot Cake
2 cups flour 2 cups sugar 1 tsp baking powder 1 tsp baking
soda 1 tsp salt 1 tsp cinnamon 3 cups finely shredded
carrots 1 cup oil 4 eggs Cream Cheese Frosting
Combine all ingredients in order given, using wooden spoon.
Bake in greased and floured 9x13-inch pan at 325 F for 50-60
minutes (for two 9" layers, bake for 40 minutes) or until
cake springs back when lightly touched. Cool on a rack(s)
and then frost with Cream Cheese Frosting.
Cream Cheese Frosting
3 oz cream cheese
4/4 cup butter 1 tsp vanilla
Chopped nuts to sprinkle over top of cake
Mix together and frost over cooled cake.
Upper Peninsula Pasties
2 c Crisco 2 c boiling Water
Melt shortening in water. Stir until mostly melted.
Add 5 1/2 - 6 c Flour 2 tsp Salt
Mix to form a very soft dough. Cover and chill until rest of
recipe is accomplished.
NOTE: You will need to make 2 batches of this unless you
make
1/2 of the filling.
FILLING:
12 large Potatoes (about 6 #) 4 med Rutabagas (or 1 large),
grated 2 med Onions 2 # ground Beef 2 # ground Pork (best if
NOT sausage) 1 TBSP Salt 2 tsp Pepper 2 tsp Garlic Powder
Grated Carrots
2/4 c Butter
Mix w/ hands to blend. Divide the dough into 12 -15 pieces.
Roll out each piece into a circle. Place 1 1/2 -2 c of
filling on half of circle and a pat of butter. Fold dough
over and seal edges. Place on cookie sheet. Cut slits in
top to allow steam to escape. Bake at 350 for 1 hour or
until brown.
Manly Man Quiche
1 cup roughly diced ham 1 cup chopped onion
3/2 cup diced mushroom 1 grated zucchini, skin on.
Squeeze out liquid in paper towels, or use another
favorite vegetable
1 unbaked 9-10 inch pastry shell (I pre-bake shell about
5min.) 3 cups shredded white cheddar, jack, Swiss or combo 3
eggs, slightly beaten, I have been known to use 4 1 cup milk
4/2 tsp salt
5/8 tsp pepper
6/4 tsp nutmeg
Heat the diced ham in large skillet with a bit of butter.
Add onion, shrooms and zucchini, cook till onion is soft.
Turn contents of skillet into the pastry shell using at
least a 9 inch pie plate.
Sprinkle w/cheese. Pour a mixture of eggs, milk, s&p and
nutmeg over cheese.
Bake at 350 30-35 minutes or until very lightly
browned and set.
Spinach & Feta Quiche
1 small white onion, chopped 3 Tbsp. oil 1 pkg. frozen
chopped spinach 1 tsp. salt 1 tsp. dill weed 4-5 oz. Feta
cheese, crumbled 4 oz. cottage cheese (I used lowfat) 3
large eggs, beaten 1 c. half and half 1 (9-inch) deep
dish pie shell
Thaw spinach and press in collander to drain moisture *very*
well. Chop onion and saute in the oil about 5 minutes. Add
spinach and continue cooking, stirring often until all
liquid is gone. Transfer to a mixing bowl and add remaining
ingredients. Pour into unbaked pie crust and bake at 375
degrees for 30 to 35 minutes or until knife inserted into
center comes out clean.
Colcannon
3-4 med. potatoes, peeled and cut in quarters 2 T milk or
light cream
7/4 t salt
8/8 t pepper 2 c chopped cabbage 2 T butter or margarine
9/4 c chopped onions 2 T butter (for frying) Crumbled Bacon
Cook potatoes in boiling water till tender; drain,
reserving water.
Place in a large bowl. Mash with hand masher till well-
mashed. (I find the electric mixer makes it too gooey).
Add milk, salt and pepper and beat till fluffy. In the
same saucepan as potatoes were cooked in, cook cabbage
in reserved potato water for 6 to 8 minutes, until
tender. Drain.
Meanwhile, melt 2 tbsp. butter in frying pan and saute onion
until tender. Add mashed potato and cooked cabbage to the
onion. Heat throughly, stirring constantly. Place in a
heated serving dish. Serve hot, topped with butter.
Note: Bacon added just before serving is nice, too.
Fried Green Tomatoes
4 - 6 firm green tomatoes 2 cups flour 2 cups corn meal 2
eggs 2 cups milk Salt, Black Pepper and Cayenne Pepper
vegetable oil for frying
Heat 1 inch of oil in a frying pan to 350 f. Beat eggs into
milk. Slice tomatoes 1/4 - 3/8 inch thick. Mix four,
cornmeal and seasonings together and then dredge tomatoes
into the dry mixture. Gently tap off excess then dip into
egg-milk and back into the dry mixture. Fry until edges
begin to brown slightly and/or both sides are turning
golden in color.
Tomato Pie
Cornmeal Pie Shell* 6-8 med. tomatoes
1/4 c mayonnaise (Miracle Whip Light!!)
2/4 c sour cream (or plain yogurt) 1 clove minced garlic
Salt & Pepper 2 TBSP butter
3/2 c chopped green onions (top & bottoms)
4/2 c soft (fresh) bread crumbs
5/4 c chopped parsley
6/4 c Parmesan Cheese
Prepare and partially bake pie shell.
Slice tomatoes 1/2" thick and layer in pie shell. Combine
mayo, sour cream & garlic. Spread over tomatoes. Sprinkle
with salt & pepper.
Melt butter and saute green onions for a few minutes. Stir
in bread crumbs, parsley, & cheese. Sprinkle over tomatoes.
Bake at 350 F. for 30 minutes. Let rest at least 10 minutes
before cutting and serving.

CORNMEAL PIE SHELL
Combine 3/4 cup plus 2 TBSP flour and 2 TBSP yellow
cornmeal.
Remove and discard 2 heaping TBSP of the flour/cornmeal mix.
Add 2 TBSP cold water to mix (more if necessary) and cut-in
6 TBSP butter.
Mix all together and roll into a 10" circle. Fit into 9" pie
pan. Trim/shape pie shell edges.
Bake at 450 F. for 5 minutes.

cream of mushroom soup 10 1/2 oz cream of celery soup 10 1/2
oz cream of chicken soup 29 oz Italian style diced tomatoes
-----------CHOOSE ONE FROZEN VEGETABLE------- 10 oz spinach,
frozen 10 oz broccoli, frozen 10 oz English peas, frozen 16
oz yellow squash, frozen 10 oz corn, frozen
--------------CHOOSE ONE PASTA/RICE-------- 2 c elbow
macaroni, uncooked 1 c rice, uncooked 4 c egg noodles,
uncooked 3 c shells, uncooked
----------CHOOSE ONE MEAT/FISH/POULTRY-------- 12 oz tuna,
drained & flaked 2 c chicken, cooked & chopped 2 c ham,
cooked & chopped 2 c turkey, cooked & chopped 1 lb ground
beef, brown & drain
------------CHOOSE ONE OR MORE EXTRAS----------- 3 oz
mushrooms, drained
7/4 c black olives, drained
8/4 c bell pepper, chopped
9/4 c onion, minced
10/2 c celery, chopped 2 garlic cloves 4 1/2 oz green
chilies, chopped 1 pk taco seasoning mix

11/2 c mozzarella, shredded
12/2 c parmesan, grated
13/2 c Swiss, shredded
14/2 c bread crumbs, dry
Preheat oven to 350F.
Combine 1 cup sour cream, 1 cup milk, 1 cup water, 1
teaspoon salt and 1 teaspoon pepper with Sauce Maker. Omit
sour cream and milk when using tomatoes.
Stir in frozen vegetable, pasta/rice, meat/fish/poultry and
if desired, extras. Spoon into a lightly greased 13 X 9
baking dish. Sprinkle with toppings.
Bake casserole, covered for 70 minutes, uncover and bake 10
minutes more.
