  1. I am having a dinner for 12 people on Friday night. My menu includes
    Alfredo sauce. Most of the guests have indicated they like shrimp, 3 like
    chicken better and 2 are Vegetarians.

    I plan on roasting chicken breasts and dicing the meat.

    I usually set up the food on the buffet and let guests help themselves
    rather than dishing it up for each guest.

    My question is how would you go about setting up the buffet line with the
    choices for the Alfredo?

    Maybe mixing the noodles into the Alfredo sauce as usual and putting the
    chicken and shrimp in chafing dishes for guests to add what they want? Kind
    of smacks of "Build your own Alfredo dish", doesn't it?

    Any advice is appreciated.

    I'd serve the Alfredo as one course (meatless/shrimp free) and serve
    shrimp and other goodies in other courses. That way all diners are
    covered and will get enough to eat. Perhaps shrimp appetizers (and
    another appetizer for those who don't eat shrimp) and then the Alfredo,
    then a wonderful light salad course.... finishing up with a great dessert!

    You aren't a restaurant. People shouldn't expect to come to your house and
    order whatever entree they prefer.

    Neverthless, since you know their preferences and you wish to serve
    fettucini (or something) alfredo, I would suggest that you make three
    complimentary dishes--one pasta alfredo, one shrimp, and one chicken--and
    also serve a large green salad. Guests can then select as much of each as
    they wish.

    Yeah, that was pretty much the way I had it pictured as well.

    Great salad with dressing from one of my favorite restaurants and
    Italian Creme Cake for dessert.

    Oh, and Baugna Cauda for starters.

    It doesn't get much better (well, one serving bowl instead of 3 would
    have been better).

    Yes, and its the perfect solution for your situation. You might also
    consider serving a marinara sauce for those who don't want all the fat
    that's typically in alfredo sauce.

    I have to agree with two others here: Lose the alfredo idea. That's one of a
    list of foods (like fish) that should be served at exactly the right moment,
    directly onto the person's plate. It doesn't belong in a buffet/smorgasbord
    or whatever you want to call it.

    I haven't thought of a way to keep the pasta from becoming a gluey
    mass, I think it's a really bad choice for a buffet. I hope for their
    sake the OP reconsiders.

    That's just not true. Fish, both hot and cold dishes, including
    smoked/pickled, is one of the more popular buffet foods... among many
    other affairs you've obviously never attended a luau. Most of the
    dishes at Scandinavian smorgsbords consists of seafood.

    We're talking about hot food, not cold pickled fish, you putz. When hot fish
    is ready, it's ready, and that general rule is good enough for someone who
    thinks alfredo sauce is a good idea for a buffet.

    Snipped to keep it short but have you got a lazy susan perchance? Alfredo
    in the center then put the various meats in every other tray and add some
    steamed veggies to the others. Make 2 or 3 types of shrimp (base is same
    with butter, spices differ with one garlicy, one 'hot' and one plain). Make
    2 types of chicken (one with an asian treatment of soy and the other with a
    garlicy dryrub applied to the chopped chicken).

    For the vegetables, I'd suggest steamed broccoli, 2 types of mushrooms
    (plain butter saute and a spicy hottish one with paprika and cayenne), and
    the last (most dish sets have 9 pockets that I have used) to be roasted bell
    peppers in several colors.

    Grin, if a friendly group, ask folks to let the vegetarians go first or be
    ready to make more veggies on the fly if needed.

    I had a lazy susan years ago that had a warmer at the base. The various
    bowls were also microwavable for a fast reheating and the center part could
    be either the bowl, or a sort of small crockpot (not quite fondue but you
    could keep a cheese sauce melted in it).

    If you do not have a lazy susan, you can still use chaffing dishes but
    obviously do not put the veggies in the same one with the meats. Put the
    garlicy meats on one, and the spicy-hot meats in another with a 3rd for the
    veggies if you can do that.

    Theres also a simple way to keep food hot if it isnt for too long and it's
    all you have. One larger bowl with boiling waterfrom a kettle, and a
    smaller one (smaller but taller is best) with the food in it.

    Pasta/noodle dishes with cream sauce is very popular at buffets... the
    cream sauce is not supposed to be the consistancy of congealed library
    paste.

    Typically buttered pasta is served with the sauce napped over... the
    sauce often contains seafood; shrimp, scallops, cod, salmon, smoked
    salmon, etc... never cheese with seafood... it's at church-feed type
    affairs where the pasta is premixed with the sauce so it has plenty of
    time to congeal, hot dish/a la kink style
