I can (sort of) see the advantage of a chemical response, but I would
suggest that in your example, a huge part of it would be that after
mastication, the salad would be mostly water and would thus be absorbed
rapidly, while the cake consists of fat and some complex carbohydrates
(as well as sugars) that will take longer to absorb.
I am however arguing this from first principles rather than any specific
study, my area of (supposed) expertise was at a far lower level than
this.
