  1. This creamed beef recipe is wildly popular with senior citizens dining at
    the Feed Bag.

    Ingredients:

    1 pound ground beef
    1/4 teaspoon pepper
    1 teaspoon kosher salt
    1 tablespoon sugar
    1 teaspoon cumin
    1 teaspoon chili powder
    1 small diced onion
    3 cups heavy cream
    1 tablespoon molasses
    1 teaspoon Worcestershire sauce

Brown the ground beef with the sugar, salt, cumin, chili powder, onion and
pepper. You may drain excess fat (we don't at the restaurant).

Add the heavy cream, molasses and Worcestershire sauce.

    Cook down until completely thickened.

Put into a blender and puree.

    Garnish with a tomato wedge.

I tried this last night and it is DELICIOUS!!! Thanks Chef for another
wonderful recipe! I've noticed your recipes are usually quite unique. Do you
create these dishes yourself or are they standard recipes at your
    restaurant?

There's nothing "unique" about this... it's a variation on the Navy's
version of Creamed Chipped Beef (except the Marines use chipped beef, not
ground beef and they don't add cumin and chili powder and such.) I don't
understand why you're so thrilled with this. It's nothing more than
adulerated ground beef in a white sauce. Sausage gravy is pretty much the
same thing down here in the south, except it's sausage, not ground beef.

Well, Jill, it does have at least 4 ingredients that I've never associated
with any other recipe for creamed beef, chipped or otherwise. Sugar,
cumin, chili powder, and molasses would certainly change the taste
dramatically, and heavy cream instead of flour-thickened milk may give it a
rather different texture/consistency. Not unique? Perhaps, but different
enough to stand on its own.

I've never added any of those 4 ingredients to SOS either.

After naming himself "Fagin" and the supposed restaurant "The Feed Bag"
and saying it was popular with senior citizens, the weird spices (and
molasses) and then the puréeing, he still had to add that clincher. I
was really disappointed that the recipe omitted the can of cream of
    mushroom soup.

Okay, I missed this thread. WTF is a Creamed Beef Smoothie? Huh... I

Ooooh, you know I didn't read down far enough to realize it's pureed. Even

  17. below is the recipe from the marines - perhaps not quite as elegant as yours

    1 teaspoon kosher salt
    1 tablespoon sugar
    1 teaspoon cumin
    1 teaspoon chili powder
    1 small diced onion

    1 teaspoon Worcestershire sauce

Brown the ground beef with the sugar, salt, cumin, chili powder, onion and
pepper. You may drain excess fat (we don't at the restaurant).

Add the heavy cream, molasses and Worcestershire sauce.

    Cook down until completely thickened.

Put into a blender and puree.

    Garnish with a tomato wedge.

    SOS Ingredients:

1 pound canned ground beef, or similar appearing meat or meat substitute
1 quart canned oil (cooking oil, preferably)
    5 lbs canned flour
1 tsp canned onion powder or canned garlic powder or canned cream of tartar
water as needed (if using sea water, reduce salt by half)
    1/4 teaspoon canned pepper
canned salt - 1 tbs to 1 handful, depending on your day.
    1 loaf canned bread

Toast the bread on one side _only_ on the griddle, the day before if
possible, and store overnight in the cooler with the oil (do not pour oil
    over bread !).

Grey the ground faux-beef in some water in a steam kettle.

Puree faux beef in power mixer for 5-10 minutes and return to steam kettle.

Add dry ingredients (not bread) and stir well (cigarette ash adds zest)

    Boil until an off-grey.

Add 3-4 tbs oil (just enough to make mix thicken so a large serving spoon
can be bent in mix) and heat thru.

Immediately before serving, pour remainder of cold oil over mix, stirring it
lightly into mix so as to have pleasantly shaped clumping of the pureed
meat-like ingredient, and ladle generously over a slice of the bread placed
soft side down on metal mess kit pan, preferably set off center, so the cold
toasted sheet of bread can be seen.

Serve with green very slightly sweetened warmed kool-aid.

    Garnish with ..

(hey, what the hell is a garnish? Hey, just kidding.

    - wipe top of each serving portion with back of ladle to garnish.)
