    We grilled chicken breasts that had marinated in lime juice, oil, lots of
    garlic, thyme, oregano, and s/p and served them with grilled portabello
    mushrooms stuffed with a sauteed mixture of spinach, feta, garlic, shallots,
    and chopped portabello stems. Also grilled some asparagus.

    LOVE that chicken and will have leftovers tonight either in a salad or
    "fajita-style" (haven't decided yet).

    We had grilled steaks, hamburgers and mushrooms with some steamed
    broccoli.

    I purposely made too much meat so that we can have leftovers tonight.
    Besides I wanted to try my new lump hardwood on the grill. We actually
    ate outside on our new patio furniture and using the heat lamps.

    It gets breezy around here so it can be a bit chilly eating outside.

    the rice a tiny bit soupier when I put it into the oven, but I still
    like the results. The chicken sank down into the rice a bit, but
    man-oh-man, this thing is good.

    I heartily recommend this book, if anyone is contemplating buying it.
    I have made one of the tapas from the book as well...and it was also
    very good. The book is Paella! by Penelope Casas.

    I am thinking about it, Koko. There are a wealth of them in this
    book.. And there is a Spanish Table in Santa Fe, so I can get all the
    ingredients....
