    I'd buy at least one, probably two, and I'd be happy to submit recipes.
    Also to help out - converting measurements again or proofreading or
    whatever needs doing.

    Bread Salad

    Recipe By: Posted to rec.food.cooking by Barb Schaller 4-1-2006
    Serving Size: 4
    Preparation Time: 0:00
    Categories: Salads

    Amount Measure Ingredient Preparation Method
    2 tablespoons white wine vinegar
    juice of one lemon
    1 teaspoon Dijon mustard
    2 cloves garlic, minced
    2/3 cup extra virgin olive oil
    salt & freshly ground pepper

    4 cups day-old Italian/country bread, in 1" cubes
    2 cups grape tomatoes
    1 small red onion, sliced thin
    3 tablespoons minced parsley
    1/2 cup kalamata olives, pitted & sliced
    1 tablespoon capers, rinsed and drained
    6 leaves fresh basil, finger-torn

    Make the dressing by combining the vinegar, mustard, lemon juice and
    garlic in a bowl. Whisk in the olive oil. Add salt and pepper.

    Put the bread cubes in a large mixing bowl and pour the dressing over
    them. Toss to coat evenly. Let sit for 30 minutes or so.

    To serve, add the tomatoes, onion, olives, parsley, capers and basil to
    the bread cubes. Toss and serve.

    Notes: This is Samantha Demidavicius' recipe, made for us at the
    Calgary 2001 Cook-in in their home. It was awesome! It is adapted from
    Charlotte Blackmer's recipe.

    - even existed! Is/are it/they still available?

    I would be very happy to help in some way with a brand new cook book,
    why redo something when you can do something new?? Everyone probably
    has a lot more recipes they could send in.

    As far as the Charity--- not really will about Katrina, have seen a
    lot of abuse of Katrina Funds, maybe something really specific would
    work.

    Perhaps something like Habitat for Humanity has something
    going especially for Katrina? Or should we stick to a food
    charity. Probably. Second Harvest of New Orleans? Or
    maybe some other community that isn't getting the spotlight
    that New Orleans is.

    managed to work together in harmony to get the last book done.
    Only spats came about after all the work was done and people
    who didn't lift a finger to get it done suddenly had strong opinions.

    Right now, I think that the newer RFCers are just feeling frustrated
    that they weren't involved the first time around and that it's nearly
    impossible to come by a hard copy of the book.

    If we had someone who was willing to mastermind this whole thing and
    someone else to act as treasurer, I'll bet there'd be some strong
    momentum.

    I agree with an earlier poster about contributing in some way to a
    hurricane relief organization.

    Good to see you back! I went on a long hiatuse also and came back in
    the 90s. I don't know if anyone has an extra copy of the cookbook.
    My extras have all been given as gifts.

    I actually have two extra copies, although one has already been designated
    to go to Joseph Littleshoes. I still have to get to the post office to
    figure out how much it will cost to ship and I guess I'll figure out how to
    use my rusty (not trusty!) Paypal account. The cost might be prohibitive to
    mail one to Australia for Lady Jane, though.

    If I remember correctly, before we came out with a second edition,
    someone asked the posters on rfc to indicate whether they would be
    interested in buying copies of the second edition and how many. The
    response was very enthusiastic and the second edition was sold out, as
    was the first one.

    We would probably want to do the same thing, if we wanted to think of
    a third edition. But, first of all, we would have to find an
    organizer and coordinator, a job which Victor handled so ably and
    graciously for editions one and two.
